The main ingredient of typical Colombian food is meat (of different types), accompanied with rice, beans and sometimes almost always potatoes. Despite this, variations in the preparation that are around the country are delicious and can enjoy unsurpassed feasts. Here are some of the most popular:
Paisa tray PaisaBandeja
A monstrous dish. Paisa tray comes with ground beef, pork rinds, avocado, salsa, eggs, beans, rice, a small corn bread, and often, 2 or 3 types of sausages. As the name says, it is more common in the paisa region of the country and find the largest and most delicious in Medellin portion.
Fried fish FritoPescado
There are many variations of this dish, but the most popular come with crappie, catfish or Sierra. The fish is fried whole so most times served as water wine, served with rice, beans, salad and fried plantain.
AjiacoAjiaco
The Ajiaco is a soup made with three different types of potatoes (Colombia has a variety), chicken, capers, corn and rice. There are always discussions about where to get the best chili sauce, so we recommend the Santafereño Ajiaco found in Bogota.
Sancocho
Sancocho is a soup that is prepared in different ways, depending on the region. The fish is very popular, although this soup is like a mixed grill as it is prepared with different types of meat such as chicken, beef, pork and sometimes more variety. lechona
The suckling pig is a typical dish of the region of Tolima consisting of pork stuffed with peas, onions, rice and several species (with its visible head) and is accompanied by arepas. To ensure that the meat is tender, the suckling pig is cooked for up to 10 hours on low heat.
The real lechona (pride and tolimenses), without rice is cooked and has much more flavor than that found in Bogota.
Posta Negra NegraPosta
Black Posta is a traditional dish of the Caribbean Coast, especially Encartara. Thanks to the changes in its preparation, it is very difficult to prove two identical dishes in different places, but basically consists of thinly sliced beef marinated with onion, vinegar, garlic and other herbs.
